Blueberry Cream Cheese Loaf Recipe

Ingredients:

For the loaf:

  • 1ยฝ cups all-purpose flour
  • 1 tsp baking powder
  • ยฝ tsp baking soda
  • ยผ tsp salt
  • ยฝ cup butter (softened)
  • ยพ cup sugar
  • 2 eggs
  • 1 tsp vanilla extract
  • ยฝ cup milk
  • 1ยฝ cups fresh or frozen blueberries

For the cream cheese filling:

  • 200g cream cheese (softened)
  • ยผ cup sugar
  • 1 egg
  • ยฝ tsp vanilla extract

ย Method:

  1. Preheat the oven
    Preheat your oven to 180ยฐC (350ยฐF).
    Grease a loaf pan or line it with parchment paper.
  2. Mix dry ingredients
    In a bowl, combine flour, baking powder, baking soda, and salt.
  3. Prepare the batter
    In another bowl, beat butter and sugar until light and fluffy.
    Add eggs one at a time, mixing well after each.
    Stir in vanilla extract.
    Now add the dry ingredients and milk alternately, mixing gently.

Fold in the blueberries at the end.

  1. Make the cream cheese layer
    Mix cream cheese, sugar, egg, and vanilla until smooth.
  2. Layer the batter
    Pour half of the batter into the pan.
    Spread the cream cheese mixture on top.
    Add the remaining batter.
    (Optional) Use a knife to create a light swirl.
  3. Bake
    Bake for 50โ€“60 minutes.
    Insert a toothpick โ€” if it comes out clean, itโ€™s readyย 
  4. Cool & serve
    Let it cool in the pan for 10โ€“15 minutes.
    Then remove, slice, and serve.

ย Tips:

  • If using frozen blueberries, add them directly (donโ€™t thaw).
  • For extra juiciness, add more blueberries.
  • You can top it with powdered sugar or a glaze.
