Ingredients
Dough
- 500g bread flour
- 350g warm water
- 100g active sourdough starter
- 10g salt
Garlic Parmesan Filling
- 4 garlic cloves (minced)
- 2 tbsp melted butter
- 1 cup grated parmesan cheese
- 1 tsp parsley
- 1 tsp oregano (optional)
Instructions
Step 1 โ Mix Dough
In a large bowl, mix:
- flour
- water
- sourdough starter
Mix until no dry flour remains.
Cover and rest for 30 minutes.
Step 2 โ Add Salt
Add salt and mix well until smooth.
Step 3 โ Stretch & Folds
Every 30 minutes perform stretch and folds 3โ4 times.
During the last fold add:
- garlic
- parmesan
- parsley
- oregano
Fold gently into the dough.
Step 4 โ Bulk Fermentation
Cover the dough and let it rise for 4โ6 hours until puffy and airy.
Step 5 โ Shape
Shape into a round loaf and place into a floured banneton or bowl.
Cover and refrigerate overnight.
Step 6 โ Bake
Preheat oven to 230ยฐC (450ยฐF).
Bake in a Dutch oven:
- 20 minutes with lid on
- 20โ25 minutes lid off
Bake until deep golden brown and crispy.
Optional Garlic Butter Topping
Mix:
- melted butter
- minced garlic
- parsley
Brush over hot bread after baking for extra flavor.
